Not only does The Food Truck operation provide the hotel with an essential service, it also allows these operators to better understand our guest profile, and allows them to start laying the groundwork in place for the restaurant operations in advance. We are currently targeting a restaurant start date of October, 2012. Quality Food Service is Essential to our Operations. Sole previously had working relationships with a a series of local area restaurant to provide food service to guests. However, due to the logistical differences of operating a hotel restaurant versus a stand along restaurant, as well as competing interests between the local area restaurants own patrons in the restaurant versus outside patrons from the hotel, we had many dissatisfied guests and found it necessary to find another solution for food service. The Bite LLC Food truck is an award winning gourmet mobile food service. Its awards include best burger in south Florida 2 years in a row. Due to the low overhead for the food truck and its ability to be located on site, Bite is able to operate at the hours required by a hotel operation and to provide timely food service to guests. The Food Truck is fully self contained. The truck has containers for its own fresh water and a tank for dirty water. Grease bins are used to dispose old fryer oil. The Food Truck is licensed by State of Florida Dept of Health. The truck is not open to the general public. It is not visible from the street or public right of way. It is not seen by hotel guests. The hours of operation are 11:30 AM - 10:00 PM. The truck is fully mobile and can move off site every day if necessary.
